Spit-roasted pork loin

Currently spit roasting 4 small pork loin roasts. Prepped them by rubbing them with a spice mix that contains any or all of the following:

Hungarian sweet paprika, coarse salt, toasted onions, ground celery seed, garlic, sugar, black pepper, onion, arrowroot, ground dill, caraway seeds, fenugreek, dill weed, turmeric, green onions, bay leaf powder, cumin, coriander, ginger, cinnamon, white pepper, fennel, nutmeg, basil, chervil, marjoram, parsley, savory, tarragon, thyme and cloves

Vacuum packed the roasts and put them in the reefer overnight, then onto the spit, and over heat at about 400 degrees of so. Added maple pellets to get some smoke. Toward the end of the cook, Iíll glaze them with a barrel-smoked maple syrup the wife and I like.


On the spit, and over the heat...

Looks good.
one of my favorite things to put on the rotisserie.
I put a glaze on mine using home made jalapeno jelly i make sure is good that way.
