Brisket smoke.

Here's the brisket I had to prep. I'll be smoking it tomorrow.


Untrimmed Prime-grade whole brisket






Trimmed...






The trimmed off fat, which I'll use at least part of for smoking the brisket




Rubbed brisket




Packed and into the chill chest till early tomorrow morning




I'll be smoking with mixed oak and hickory chunk charcoal, and pecan wood.

Brisket is in and soaking in the smoke.



BTW - I'm using Big Green Egg chunk charcoal, and is it great stuff! It lit immediately using Big Green Egg fire starter blocks, and stayed lit. This is really nice charcoal.

Glad you mentioned that.  I've been looking for some good charcoal.   Most I've bought is junk.
