Smoked rib roast

Smoked a small prime rib to celebrate the anniversaries of my wife and I and my son and daughter-in-law.


Whole rib roast...

Bones separated...

Rubbed with a mix of sea salt, granulated garlic, Granulated onion, black pepper and mustard powder, then reassembled...

Smoked at 250 with pecan to an internal temp of 130. Then rested for 15 minutes.
