A couple years back, I sold a Remington 1858 and a Remington 1858 .45 Colt conversion pistol to a buddy. Now he and his wife are in the middle of hard times. He lost a toe to diabetes and poor circulation and is back in the hospital to lose another toe and maybe the whole foot. I'm probably going to buy one or both of the guns back to give them some extra cash.

I'd love to add a Paterson to my collection, but cannot justify the money they get for one. Maybe I'll run across one someday. Of course, I've said the same thing about an 1860, and that hasn't shown up on my doorstep yet.

I feel ya on the fires. It's been pretty wet here, but when it dries out, we could get some bad fires. And I live less than five miles from where the Granite Mountain Hotshots died.

I how the business does well. The biggest problem in AZ isn't the lack of bp guns. It's the lack of black powder. You cannot buy black powder in AZ, that I'm aware of. You have to mail order it in.

Started 21 pounds of bacon curing. 1/3 is Dirty Chai bacon, 1/3 is Brown Sugar-Pepper-Rum, and 1/3 is Matcha (made with saki this time).

Generally speaking, your meat absorbs as much smoke as it is going to in two to four hours. After that, you're just cooking. Wrapping it in several tight layers of aluminum foil makes it cook faster, and makes for juicier meat. It is a standard in competition cooking - which may or may not get you the "real" barbecue taste, since competition smoking has a different goal from home smoking. They need to turn out tender, smoky meat in a specified amount of time.

You can't keep it from happening. It's called bark, and some people pay extra for that. However, you can soften it up by wrapping whatever you are smoking in a couple layers of aluminum foil after it has smoked two-to three hours. Wrap it tightly.
