First summer cook.

Tonight was the first night of summer cooking, out in the backyard, without heating up the kitchen.


Started by rendering homemade pancetta.




Added a bunch of Crimini Mushrooms.



Cooked them down.



Removed the mushrooms to keep them from burning, and braised a bunch of sliced cabbage using the fat left from the mushrooms/pancetta, and slowly drizzling chicken stock as needed.



That was all mixed before serving.



To go with marinated, grilled pork tenderloin.
